A Little Something Something To Feed Your Belly & Warm Your Soul

And because I just spent a week recovering from THE SURGERY, and then upon wondering why I was suddenly hit with a case of the chills that I couldn't get past for 3 days, it hurt like crazy to move and I was left wondering why I actually felt like I was getting worse...until my nurse called and told me that I had a kidney infection, antibiotics prescribed, thankfully taken, and I am beginning to feel better....because of all of that, instead of a new fun FHE lesson, I am going to share with you one of my VERY FAVORITE things about Fall!

You must try this! Promise me you will!

This comes from my mom's kitchen. It is the most tasty, most satisfying meal AND it is SO good for you! It is also made up of just about everything you will already have in your house and makes for GREAT leftovers! One of my favorite ways to serve this is to cut a really wide opening in a pumpkin and carve it out REALLY good. Then just before serving, pour the soup into the pumpkin! SO PRETTY! Bread bowls...if I liked bread...would be good with this too. Maybe a little cornbread. Whatever you would like. Alright, let's get to it, shall we?!

HEALTHY HARVEST SOUP
Let's start by chopping an onion...you may call me slow...I deserve it, but PW did a "tutorial" on how to quickly chop an onion, and what do you know....AMAZING! So now I will show you!
Cut the ends off your onion and peel the skin off. Cut it in half. Lay the half on the cutting board and cut it into slices like this...

Now turn it the other way and do they same thing! PERFECT!
Now throw 2 lbs. ground turkey breast, 1 onion, chopped & 2 cloves of garlic, chopped, into a large pot. Brown. Drain (if needed).
You will need 2 cups chopped carrots, celery and potatoes. I use the red potatoes so I don't have to peel them. Plus, I like them SO much more! Then throw a can drained corn into the mix.

Now gather 1/2 c. minute rice (I use brown), 3/4 tsp pepper, 1/2 tsp parsley flakes, 1 tsp. salt, 1/2 tsp basil leaves & 2 bay leaves

Add 6 c. of water and 6 tsp. instant chicken boullion granules.

Bring to a boil.

Cover and simmer for 20 min.
 Stir in a 15 oz can of Tomato Sauce.

Cover and let simmer for 10 more minutes.


Serve and ENJOY! This truly is heaven! Not to mention, there aren't words to describe how good your house smells while you are cooking this! It is AMAZING! Oh and don't forget to let it cool. I hate when you burn your mouth so bad you can't taste anything for the next week! :)

Definatly a fav at our house too! (Thanks MOM) I made this the other day and didn't want to go to the store, so I just used chicken tenders. MMMM! Also very good.

Making this just now, can't wait to try it :-) The chicken farfalle was sooooo good, it will go into the regular rotation! It is a perfect pre game meal for my hockey player son...thanks for sharing and please share more of your favorites, because I think we have the same 'taste', LOL!
